Fresh Apple Cake

Here it is, Hot Wheels!

2 cups sugar
1 cup vegetable oil
3 large eggs
3 cups all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. ground cinnamon
1/2 tsp. freshly grated nutmeg
3 cups peeled, finely chopped apple
1/2 cup chopped pecans (optional)
1 tsp. vanilla extract
1 tsp. coconut extract (optional)
Brown Sugar Glaze

Beat first 3 ingredients at medium speed until creamy.

Combine flour and next 4 ingredients; add to sugar mixture, beating well. Stir in apple, pecans, and flavorings.

Pour batter into a greased and floured 12-cup Bundt pan. Bake at 350 degrees for 1 hour and 15 minutes or until a wooden pick inserted in the center comes out clean. Cool in pan on a wire rack 10 to 15 minutes; remove from pan and cool completely on wire rack. Drizzle Brown Sugar Glaze over cake.

Brown Sugar Glaze

1/2 cup packed brown sugar
1/4 cup butter
2 Tbsp. evaporated milk

Combine all ingredients in a small saucepan; cook over high heat, stirring constantly, for 2 minutes or until sugar melts. Cool to lukewarm before pouring over cake.

Note: I poured the glaze on the cake while the cake was still warm so it would soak in.

I'm seriously making a list to go to the store! I don't have coconut extract on hand lol. I do have some coconut though!

That's not actually a part of the printed recipe--I just threw it in and it was so good. I have kinda gotten addicted to coconut extract--it just seems to add something wonderful without really tasting like coconut. I add almond flavoring to a lot of stuff, too.

Actual coconut would probably be really good in it, too, come to think of it.

I love coconut, apple and nuts. Sounds like muffin making time!

Scrappy, you ever sub home dried apples for reg apples? They're just slightly tart.

My grandma used to make a seven(or eight) layer cake using dried apples that were to kill for and I ain't kidding. A real thin cake layer, a layer of apples, etc. Damn, and make fried apple pies using those dried apples? Kee-rist, just incredibly delicious.

Never have used dried apple in this cake, but they would probably work. I do make fried pies with dried apples like my grandmother did. OMG! You are so right--I can literally eat those until I explode! Therefore, I don't make them too often as it is too hard on the old will power.

Ingredients

  • 4 cups chopped apples
  • 2 cups white sugar
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 1/2 cup vegetable oil
  • 2 eggs, beaten
  • 2 teaspoons vanilla extract
  • 1 cup chopped walnuts

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. In a medium bowl, stir together the sugar and apples, set aside. Sift together the flour, baking soda, cinnamon and salt.
  2. In a large bowl, stir together the oil, eggs and vanilla. Add the apples and sugar, mix well. Stir in the dry ingredients, then the nuts. Pour into the prepared pan and spread evenly.
  3. Bake in the preheated oven for 45 minutes, or until cake springs back to the touch.

Never have used dried apple in this cake, but they would probably work. I do make fried pies with dried apples like my grandmother did. OMG! You are so right--I can literally eat those until I explode! Therefore, I don't make them too often as it is too hard on the old will power.

The best apple cake I ever had, and I mean EVER, was my grandma's! She used her own sun cured dried apples. It had seven or eight very thin layers. God! You can't imagine the abundant rich, tart, sweet flavor.
